During the month of December, I blogged my little yule-tide heart out. Now that I’m back to work, I don’t have quite as much time to document yummy things and sweaty workouts. That’s not to say it’s not happening. It’s just not as much. I’ve been doing more of this instead:
Still, life must go on.
On the weekends, I spend some time chopping vegetables for breakfasts and lunched to save time throughout the week. Try these healthy things in your lunch this week:
- Slices carrots
- Homemade hummus
- Salad with chopped onions and carrots, a hardboiled egg, mixed greens and chipotle mango dressing
- Two apples (which are my favorite food in the world)
- Deer Park Sparkling Water
I eat my salad, carrots and hummus, and an apple at lunch and save the other apple for a pre-workout snack.
Sad fact, my super cold refrigerator at work froze this beautiful salad. Note to self: work refrigerator doesn’t need to be on max!
