I guess these chickpea cookies are like my signature dessert. You can make them a hundred different ways. These were inspired by the holiday clearance rack at Wal-Mart. Who can turn down a 50% off bag of holiday baking M&M’s? I couldn’t. Here’s what I used:
- 1 can of chickpeas
- 3 table spoons of peanut butter (Make your own!)
- 2 tablespoons of vanilla flavoring
- 2 tablespoons of plain greek yogurt
- 1 cup (or more if you want) of mini M&M’s
Preheat the oven to 350 degrees. Dump all of the above in a food processor. Process until smooth.
I decided to add the greek yogurt into mine after the dough ball in the second picture occurred. It just needed a little something to moisten it up. After the mixture is smooth, put the dough into a bowl and fold in the M&M’s.
Cook these healthy delights for about twenty minutes. There really isn’t anything in them that has to “cook.” If you want them super doughy, take them out earlier. The longer you leave them in, the more they have a cookie-like consistency. This made about thirty cookies.
