Butternut Squash Fries

Andy Shardo’s was supposed to be the name of my French fry restaurant, so I can’t think of anything more appropriate to post than instructions for my current favorite fry substitute. Sweet potatoes work well as baked fries, but there is something special about butternut squash fries. I think it’s the accomplishment- the sheer fact that you can make a fry out of a squash. Just look!

To make these, just use the top of the squash. I roasted the bottom part (after I scooped out the seeds) in the oven after the fries were done. Cut the squash into strips. They can be as thick as you want them. Lay the strips out on a pan covered in aluminum foil and coated with cooking spray. Cook the strips in a 400 degree oven for about 40 mins, flipping them halfway through.

I like them a little brown so they are crispy. You can cover them with a little low-fat mozzarella so they taste like real cheese fries. Low-fat ranch serves as a great dip!
